This process begins at the farm by always selecting optimal ripe cherries, followed by depulping and fermentation, in which the the coffee will be ready for washing 24 -36 hours later, depending on weather and conditions.
After being washed (removal of mucilage), and classified, the coffee is transported without contamination to the dry mill where each lot is then spread out at about 3 inch thick layer, moving the coffee about four times a day. Slow drying is important due to the gigantic nature of the coffee, and drying of a washed process usually takes 10-12 days.
This coffee has a unique flavour which may be new to many. Juicy, herbacious, with a crisp sweetness of pineapple and apricot.
