The coffee comes from a staple farm in Indonesia; in Gayo, Aceh, Sumatara. The farmers have put in tremendous effort in producing with many creative new processes and this is one of it.
"Labu" translates directly to hulling, and this was one of the experimental processing techniques they came up with - Cherries are dry-hulled to release juices from the mucilage & fermented for a total of 8 days before being dried on raised beds.
Overall, it changes the whole outlook of flavours, presenting with unique fruitiness of guava & barley, a vibrant acidity with a smooth cacao finish.
